Keeps several weeks in airtight container. Great when dunked in coffee or hot chocolate. Add chopped chocolate, fruits, or nuts for variation with different extracts."
Ingredients
1/2 cup olive or canola oil
1 cup white sugar
3 1/4 cups flour
3 eggs
1 tablespoon baking powder
1 tablespoon anise extract
Instructions
Beat sugar and eggs until thick. Gradually stir in flour, baking powder, and extract until dough forms. On parchment lined baking sheet, form into two logs the length of the baking sheet and about 4 inches wide each. Bake at 350 degrees for about 20 minutes until firm and golden. Cool 10 minutes; slice on the diagonal into 1/2 inch slices. Place cut side down on baking sheets and bake another 15-20 minutes. Cool.
