These are a soft molasses cookie recipe that I got from my mom and are probably my favorite Christmas cookie. The dough freezes well.
Lumberjacks
INGREDIENTS
1 Cup sugar
1 Cup shortening
1 Cup dark molasses
2 eggs
4 Cups flour
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp ginger
Instructions
1.Preheat oven to 350 degrees F
2.Cream the sugar and shortening.
3.Next add 1 cup dark molasses, and 2 eggs.
4. Stir in the 4 cups flour, 1tsp baking soda, 1 tsp salt, 2 tsp cinnamon, and 1 tsp ginger.
5.Shape the dough into balls and roll in sugar before placing on greased cookie sheet about 2 or 3 inches apart.
6. Bake for 12-15 minutes
