Marvin's Jazzy Coconut

Oatmeal Cookies with a Jazzy Twist
I have a friend who loves Oatmeal, Walnut, Raisin Cookies, so I experimented by adding coconut instead of raisins. He loves these cookies and requests them often."


2 cups Quaker Oats Oatmeal (regular or quick cooking)
1 1/2 cups Flour (preferably Gold Medal)
3/4 cup brown sugar
3/4 cup white sugar
1 1/2 sticks unsalted butter (softened)
2 extra large eggs
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoon Vietnamese Saigon Cinnamon
2 teaspoons Madagascar Bourbon Pure Vanilla Extract
1/2 teaspoon Kosher Salt
1 1/4 cup Coconut
1 cup chopped Walnuts


Line 3 cookie sheets with silpats or parchment paper. Preheat oven to 400 degrees. in a medium sized mixing bowl whisk together flour, baking soda, baking powder, cinnamon and salt, set aside. Using a mixer fitted with a paddle beat the butter and sugars together until creamy. Add the eggs and vanilla and mix well. Add the flour mixture a little at a time until combined. Remove the mixing bowl from the mixer and add the coconut, oats and walnuts. Stir all together until well blended. Using a medium sized cookie scoop, scoop to desired cookie size and bake at 400 degrees until done about 11 minutes. Do not over bake because coconut will burn.
