Choco-Caramel Delights

1/2 cup butter (softened)
2/3 cup sugar
1 egg (separated)
2 Tbsp milk
1 tsp vanilla
1 cup flour
1/3 cocoa
1/4 tsp salt
1 cup finely chopped pecans
1/2 cup chocolate chips
1 tsp shortening
Caramel Filling:
14 caramels
3 Tbsp cream
Instructions
1) Beat butter, sugar, egg yolk, milk & vanilla
2) Stir flour, cocoa, & salt in a separate bowl. Blend into the butter mixture
3) Refrigerate dough about 1 hour or until firm
4) Beat egg white slightly
5) Shape dough into 1" balls & dip into egg white
6) Roll in pecans to coat
7) Place on cookie sheet & press thumb in center, BAKE 10-12 minutes
8) While the cookies are baking, make your caramel filling
9) As soon as you pull them from the oven, re-press with your thumb and spoon 1/2 tsp caramel filling, cook on wire rack
10) Melt the chocolate chips and shortening to make the perfect drizzle to fancy these cookies up a bit!
