1 cup confectioners sugar that has taken on the flavor of 1/4 vanilla bean (over the period of several days) This will be used to coat the cookie dough.
1 cup pulverized pecans
1 cup soft butter
3/4 cup granulated sugar
2 1/2 cups flour
With spoon or fingers mix nuts, butter, granulated sugar and flour into a smooth dough. Refrigerate dough overnight. Form into crescents. Bake 15 – 18 minutes. Oven temperature: 325 for electric; 350 for gas.
Let them cool; then roll them in vanilla-flavored confectioners sugar.
