Holiday Biscotti
makes a great biscotti. The oil keeps it light, but the berries make it sweet!

INGREDIENTS
1/4 cup extra light olive oil
3/4 cup sugar
2 teaspoons vanilla
1 teaspoon orange extract
2 eggs
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup berries
1/2 cup pecans or walnuts (chopped)
Instructions
1. Mix oil and sugar
2. add extracts and eggs
3. Add flour/baking powder/salt
4. Mix in berries and nuts by hand
5. Line cookie sheet with parchment paper
6. Make 2 logs (long rectangles)
7 Sprinkle with course sugar
8. Bake for 35 minutes at 300o
9. cool for 10 mins and slice
10. Put each slice in oven on side and cook at 275 degrees for another 10 minutes.
