Very yummy but rich!!"
Ingredients
1 x packet of biscuits (wholemeal)
125gm Cream Cheese
185gm White Chocolate
2 x large ripe avocados
1 x tsp lemon
50 gm melted butter
100gm berries (blue/blackberries)
30/50gm sugar/honey (taste for sweetness)
1 Tbsp water
1 Tbsp liqueur (ie Glayva) Optional
Instructions
Crush the biscuits and mix with the melted butter. Put into a 9 inch spring form pan and press down and smooth. Place in freezer for 10 mins to set. Melt white chocolate over water and add with avocados; cream cheese and lemon and mix well in a food processor until smooth and creamy. Place on top of biscuit base. Put in refrigerator until set. Heat berries sugar water and liqueur until they are mushy and you have a coulis. Serve slices and with coulis around plate.
