Cranberry Bread

A wonderful dessert anytime but especially at the holiday season. This recipe came out of a second grade reading book many years ago. It brings back fond memories. This bread makes a delicious breakfast treat as well."


2 cups flour
1 cup sugar
1 1/2 tsp. baking powder
1 tsp. salt (optional)
1/2 tsp. baking soda
1/4 cup butter or margerine

1 egg, beaten
1 tsp. grated orange peel
3/4 cups orange juice
1 1/2 cups raisins
1 1/2 cups fresh or frozen cranberries (chopped)


Mix flour, sugar, baking powder, salt and baking soda in a large bowl. Cut in butter until mixture is crumbly. Add egg, orange juice and orange peel all at once. Stir until mixture is evenly moist. Fold in raisins and cranberries.

Spoon into greased 9"x5"x3" loaf pan. Bake at 350 degrees for an hour to an hour ten minutes, until a toothpick inserted in center comes out clean.

Remove from pan;cool on wire rack.

If you choose, you may substitute cranberries for raisins to make an all cranberry bread.
