Vegan Pumpkin Pie


16 oz organic pumpkin
3/4 silken tofu
2/3 organic sugar
1-1/1/2 tsp cinnamon (depends on taste)
1/2 tsp pumpkin pie spice mix

optional - a dash of vanilla, whole wheat vegan pie shell


Preheat oven 350 combine pumpkin with all ingredients in food processor. Process until velvety smooth. Pour mixture in crust, bake 40-45 min. Cool to room temp
