Pecan Pie Mini Muffins

A delicious mini muffin that tastes like a little pecan pie, but not overly rich. I usually make a double batch because they go fast!"
Ingredients
2 eggs
2/3 c. melted butter
1 c. brown sugar
1/2 c. flour
1 c. chopped pecans
Instructions
Mix butter and eggs together, then blend with dry ingredients. Spray mini muffin pans with non stick spray and fill about 2/3 full with batter. I use a liquid measuring cup with a pour spout to pour the batter in the pan. Mix up the batter in the bowl every now and then to keep the pecans from staying on the bottom. Bake at 350 for about 20-25 minutes. Tops of muffins will be firm. Let stand a few minutes before removing. May use a mini spatula to loosen around edges before removing.
