Peanut Butter Truffles

Makes 30-40 truffles. The kids love this one and it's good for them!"
Ingredients
1 18 oz. jar of peanut butter (crunchy or smooth)
2 cups crushed pretzels
1/4 cup slivered almonds (crushed)
2 graham cracker boards (crushed)
1 tablespoon flax seed (optional)

chocolate coating (optional):
chocolate bark, chocolate melts, or chocolate chips just for the outside
Instructions
Crush and mix everything together.
Freeze the mixture for 30 minutes.
Using a 1 inch ice cream scoop, scoop and mold the balls as fast as you can...this can get sticky after a while! Pack it as tight as possible. If you need to, return mixture to freezer to firm up.
Lay out the balls on a piece of wax paper and refrigerate for one hour.
If coating with chocolate, take several out at a time and dip. Place in a mini cupcake liner.
