Mrs. J's Creamy Sweet Potato Pie

Sweet Potato Pie
Bake at 375 degrees for 30-45min. Or depending on your oven til slightly brown with a shiny sheen.
Refrigerate for 4 hours and serve."


4 sweet potatoes (cubed)
1 cup Grad. Sugar
2 large Eggs
1 tsp. Vanilla Extract
3 tsp. Unsalted Butter
1/3 cup of milk blended with heavy whipping cream
1/4 tsp. Ground Ginger
1/4 tsp. Cinnamon
pinch of allspice & nutmeg
Grahman Cracker Pie Crust
Food Processor


Boil sweet potatoes first in water til fork tender, strain and let cool first.
Take a food processor and beat potatoes, sugar, butter, spices, vanilla, milk mixture til creamy. Should look yellowish-orange.
Add eggs one by one and blend well.
Pour mixture into pie crust and bake.
