1 pkg. (2 layer) yellow cake mix
1 pkg. (4-serving size) Pistachio instant Jell-o Pudding
1 cup water
1/4 cup oil
1/2 tsp. peppermint extract
8 drops green food coloring
1 cup Chocolate chips, coarsely chopped
20 - 24 chocolate covered thin mints
Combine cake mix, jell-o pudding, eggs, water, oil, peppermint extract and food coloring in Cuisinart mixer bowl.
Blend, then beat at medium speed for 4 minutes.
Chop chocolate chips in food processor attachment.
Stir in the chocolate chips.
Pour into greased and floured 13" x 9" cake pan.
Bake at 350 degrees for 40 - 45 minutes.
DO NOT UNDER BAKE.
Remove cake from oven and place mints on top, using enough to cover cake completely.
Return to oven for 3 minutes. Remove cake and spread chocolate mints.
Cool and cut into squares
