3 egg whites
1 C sugar
1 tsp. Vanilla
1 tsp. Baking powder
14 soda crackers
3/4 C slivered walnuts
1 C heavy whipping cream


Combine ¼ C Brown Sugar and 1 C Heavy Whipping Cream in bowl and set aside in refrigerator.

Butter 1 - 9 inch pie pan. Beat egg whites until foamy. Gradually add sugar and continue beating until stiff peaks form. In a separate bowl, coarsely crumb crackers. Add 1/2 C walnuts & baking powder and stir to combine. Fold dry mix into egg whites. Add vanilla and spread into buttered pie pan. Bake at 350 for 40 minutes or until dry.


Remove Whipped cream mixture from refrigerator and whip cream until soft peaks form. Add to top of cooled pie and sprinkle remaining ¼ C slivered walnuts over whipped cream.
