Vanilla Flan With Butterscotch SauceUser Submitted Recipe
3 cups half and half
1 vanilla bean or 2 tsp vanilla extract
1/4 tsp salt
1/2 cup sugar
1/2 cup packed brown sugar
1/4 tsp salt
Put half and half, and vanilla bean in sauce pan over medium heat until it starts to steam-about 3 minutes.
Remove from heat. Cover Let vanilla bean steep for 15 mins.
Preheat oven 350 degrees.
In small bowl or bottom of a 9" glass pie plate combine brown sugar and 1/4 tsp salt. Press evenly all around bottom.
Remove bean from half and half, open and scrape seeds into cream. Briefly reheat just for a minute to steaming again..
In large bowl use Cuisinart hand mixer or whisk by hand 5 eggs, regular sugar and 1/4 tsp salt until well mixed..
Very gradually whisk in hot milk mixture until well mixed.
Place prepared pie plate in roaster. Slowly pour egg and cream mixture over the brown sugar in pie plate. Some sugar may float up to the top but will settle back down.
Pour boiling hot water into bottom of roaster about half way up the plate.
Bake 35-40 minutes until knife comes out clean.
Remove pie plate from water bath and cool in fridge.
To serve: Run knife around and invert onto plate.
