Pinto Bean Pie

Everyone loves pie, and this one contains protein. Use fresh cooked, non seasoned pinto beans or low salt canned pinto beans. (If using canned beans, rinse well.) Your company will be convinced this is a mild nut pie (although a 1/2 cup or so of nuts or finely ground pecans could be added for a fun twist) and the crowd will have good words for the cook!"
Ingredients
1 uncooked pie shell
1 cup unseasoned cooked pinto beans
4 large eggs
2 cups fine sugar
1/2 cup soft or lightly melted butter
1 Tsp. vanilla
Any other spices you enjoy
Instructions
Mash beans well but leave some texture. Beat eggs until fluffy. Add remaining ingredients to mixture. Mix all well, stirring a few minutes. Set oven at 350 degrees. Pour mix in an un-cooked pie shell. Cook until firm, but not hard. Be careful not to over cook. Serve hot or cold, and garnish if you like.
