Pinto Bean Pie
Everyone loves pie, and this one contains protein. Use fresh cooked, non seasoned pinto beans or low salt canned pinto beans. (If using canned beans, rinse well.) Your company will be convinced this is a mild nut pie (although a 1/2 cup or so of nuts or finely ground pecans could be added for a fun twist) and the crowd will have good words for the cook!
