Curious Chocolate Chess Pie

An unusual chocolate chess pie handed down through generations of southern women!"

1 cup sugar
1 stick melted butter
3 eggs (1 whole & 2 yolks)
2 tbsp cocoa & enough water to equal 2/3 cup
1 tsp vanilla
1 unbaked pie shell

Instructions
Mix sugar & melted butter.
Beat eggs slightly & add sugar/butter mixture. Beat again, and then add cocoa, water & vanilla. Pour into unbaked pie shell.
Bake at 425 for 10 mins.
Reduce oven to 375, cook approx 20 mins.
Remove from oven & cover with meringue (see below) & return to oven until browned.
Meringue - Beat 4 egg whites with 1/4 tsp cream of tartar til soft peaks form.
Gradually add 7 tbsp sugar, beat til stiff & glossy peaks form & all sugar is dissolved.
Spread over hot filling, sealing to edge of pastry.
