My Favorite Banana Cake

This is one of my favorite cakes, moist and flavorful. I always freeze my over-ripe bananas until I have enough for this recipe. It’s quick and easy to make, and I never tire of its delightful, soul satisfying flavor. My mom passed this on to me and it will no doubt be passed along in my family as well. "


2 cups sugar
1 cup vegetable oil
3 eggs
1 tablespoon vanilla
1 ½ cups mashed bananas (about 4 large)
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

(3 ounce package) cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla
2 cups powdered sugar
1/4 cup orange juice
1/3 cup finely chopped, toasted walnuts


Preheat oven to 325’ and lightly grease a bundt pan. In the bowl of a Cuisinart stand mixer blend sugar, oil, eggs and vanilla until light and frothy. Add bananas and mix until combined. Add the flour and remaining cake ingredients, mixing until just combined. Transfer to prepared pan and bake for 1 hour, or until toothpick comes out clean. Let cool on rack for ten minutes, then turn out and cool completely. Meanwhile make frosting: In the bowl of a Cuisinart stand mixer cream cheese, butter and vanilla with an electric mixer until smooth, gradually beat in powdered sugar and orange juice or milk until thick drizzling consistency. Drizzle over cake and let set. Makes 16 servings.
