This is one of the best tasting zucchini recipes. They will be a big hit at your next gathering and won't last long."


6-8 cups zucchini
2/3 cup lemon juice
1 cup sugar
1/4 tsp. nutmeg
1 tsp. cinnamon
4 cups flour
2 cups sugar
1/2 tsp. salt
1/2 tsp. baking soda
3 sticks margarine or butter


Peel, seed & cut into small pieces 6-8 cups zucchini. Cook in 2/3 cup of lemon juice until tender. Add: 1 cup sugar - 1/4 teaspoon nutmeg - 1 teaspoon cinnamon
Simmer one minute. Add one cup of crust mixture to thicken.

Crust Mixture
4 cups flour - 2 cups sugar - 1/2 teaspoon salt - 1/2 teaspoon baking soda
3 sticks margarine or butter, softened (not melted). Mix until crumbly & sticky.
Pat 1/2 of crust mixture in bottom of 9X13 glass baking dish. Pour cooked mixture on top.
Spread evenly. Pat remaining crust mixture on top of the zucchini.

Bake 350 35- 40 mins.
