Peanut Butter Cookies - 2 Dozen

I have experimented for years with the right peanut butter cookie recipe. This is what I have finally come up with and it contains no flour. Truly a wonderful recipe. "


For the cookie dough:
1-16 oz. jar of all natural peanut butter (just peanuts and salt)
1 & 1/4 cup of brown sugar
1 tsp of soda
2 eggs
1 tsp of vanilla flavoring


Preheat oven to 350 degrees. Combine above ingredients mix well.
For the final step: pour 1/2 cup of white sugar on a small plate
Form dough into 1 inch balls and roll in white sugar. Cross hatch balls as you flatten them with a fork. Bake for 15 minutes until golden brown. Cool in pan for 5-10 minutes before removing or cookies will crumble. After cooling they will hold together and be just perfect!
