Southern Chess Pie

Old south recipe for simple chess pie made with basic ingredients. Pioneer women called it "just" pie due to simple ingredients, finally known as "chess" pie! "
Ingredients
1 cup sugar
1 stick melted butter
3 eggs (1 whole & 2 yolks
2/3 cup water
1 tsp vanilla
1 unbaked pie shell
meringue
Instructions
Mix sugar & melted butter. Beat eggs slightly & add to sugar/butter mixture. Beat again slightly, then add water & vanilla.
Pour into unbaked pie shell. Bake at 425 for 10 mins, then reduce oven to 375 & bake approx 20 mins. Remove from oven & cover with meringue (see below). Return to oven til nicely browned.
Meringue - Beat 4 egg whites with 1/4 tsp cream of tartar til soft peaks form. Gradually add 7 tbsp sugar & beat til stiff, glossy peaks form. Spread over hot filling, sealing to pie edge.
