2 2/3 cups sugar
2/3 cup light corn syrup
1/2 cup water
Egg whites from 2 large eggs, stiffly beaten
Pinch of cream of tartar
1 tsp. vanilla
2/3 cup broken English walnuts
2/3 cup broken English walnuts
Instructions
In a very heavy 4 qt. saucepan, mix sugar, corn syrup and water. Stir over low heat until sugar is dissolved. In the meantime, quickly beat egg whites from 2 large eggs. Add a pinch of cream of tartar. Back on the stove, using a candy thermometer, make certain mixture reaches 260 degrees. Immediately pour mixture in a l qt. saucepan so it is easy to pour over the beaten egg whites. Very slowly pour hot mixture over the egg whites and continue beating 20 - 25 minutes until mixture slightly looses its gloss. Quickly stir in vanilla and nuts and drop by tablespoon onto waxed paper.
