Chocolate Date Nut Cake

A tasty mixture of chocolate, pecans and dates in a cake, topped with whipped cream, makes and out-of-this-world dessert. When I was married, my mother made several of this recipe and decorated them as a groom's cake. It has been in my family for over 75 years."


1and 1/2 cups chopped dates
2and 1/4 cups boiling water
1 and 1/2 teaspoons baking soda
3/4 cup shortening
1 and 1/2 cups sugar
2 eggs, beaten
2 cups plus 3 tablespoons all purpose flour
1/2 teaspoon salt
1 and 1/8 teaspoon baking soda
6 ounce package chocolate chips
3/4 cup sugar
3/4 cup chopped pecans


Preheat oven to 350 degrees F. Spray a 13 x 9 inch pan with cooking spray. Set aside. Pour boiling water over chopped dates and add soda. Let cool to room temperature.
Cream together shortening, first sugar and add beaten eggs. Mix well. Add date mixture and stir to combine. Sift together flour, salt and soda. Add to date- creamed mixture. Mix well. Pour into prepared oblong pan. Sprinkle top with: chocolate chips
3/4 cup sugar
Chopped pecans
Bake at 350 degrees for 35 to 40 minutes. When done, cool in pan on a wire rack. This is excellent served with whipped cream.
