Zucchini Bread

This recipe may resemble bread, but is a wonderful cake."


2 cups shredded zucchini (1 medium zucchini)
3 eggs
1 cup oil
2 tsp. vanilla
3 cups flour
1 tbl. cinnamon
1 tsp. salt
1 tsp. baking powder
1/4 cup walnuts
1/4 cup raisins


Preheat oven to 350 degrees. Line 2 loaf pans with grease and parchment paper.

Combine eggs, oil, sugar and vanilla. Add remaining dry ingredients and mix well. Transfer mixture to large bowl, and stir in zucchini, nuts and raisins. Divide batter into loaf pans and bake for 1 1/2 hours. Test with toothpick. cool and remove from pan.
