June's Apple Cake

“
A moist spongy cake with lots of apples. I like to use a mixture of apples; granny smith, macintosh, cortland, etc. Enjoy it warmed with a spoonful of whipped topping."
Ingredients
1 3/4 cups flour
2 tsp. baking powder
1 cup granulated sugar
2 eggs
5 apples
1 tsp. Lemon juice
1 stick butter
cinnamon to taste
Instructions
Peel and slice apples thinly. Put aside in a bowl of water with lemon juice to prevent oxidation. Mix flour, baking powder and sugar well, add eggs (dough will look dry). Add sliced apples (drained of water) and cinnamon to taste; work in. Pour mixture into greased 9 Inch cake pan. Melt one stick of butter. Sprinkle top of cake with cinnamon and pour melted butter on top evenly. Bake at 350 for 40 to 50 minutes.
