Chocolate Mascarpone BitesUser Submitted Recipe
3 ½ oz. mascarpone cheese
9 oz. lady fingers (hard cookies)
½ stick softened butter, at room temp.
3 tbsp. powdered sugar
3 tbsp. rum or other preferred liquor
1 cup unsweetened cocoa powder
With a food processor, reduce the hard lady fingers to fine crumbs.
With a mixer, mix mascarpone cheese, butter, sugar and liquor until all ingredients are incorporated. Then add the lady finger crumbs and incorporate as well.
Once all ingredients have been mixed together, cover the bowl holding all ingredients with plastic wrap and let rest in the refrigerator for 2 hours minimum.
Remove the bowl from the refrigerator. Place cocoa powder into a bowl of its own.
From the mixture, create small balls (about the size of a nickel) and roll in the unsweetened cocoa powder.
Set aside and serve chilled as an after dinner snack.
