Spiced Apple cakes

Easy to make moist, delicious and healthy, low-fat cakes."
Ingredients
All measurements by weight
550g apple puree
50 ml canola oil
100g AP Flour
100g Whole wheat flour
1 T Cornstarch
2 t. baking soda
3/4 t. cinnamon 1/2 t. ginger
½ t freshly grated Nutmeg
½ t. allspice
100g golden brown sugar
100g granulated sugar
50g dried apricots
50g dried (tart) plums
Instructions
Chop dried fruit into ¼’ dice. Toss with a Tablespoon of AP flour. Sift together flours, cornstarch, baking soda and spices. Add sugars and stir. Add applesauce and stir. Add (flour tossed) dried fruits. Spoon into (cupcake) papered muffin tin. Bake at 325 degrees for 30-35 minutes or until an inserted toothpick comes out relatively clean. Let cool in tin for 5 minutes. Then cool completely on wire rack.
