Chocolate Gingerbread

Classic gingerbread with the rich flavor of dark chocolate."


1/2 cup unsalted butter
3/4 cup granulated sugar, divided
1 egg, beaten
1 1/2 cup molasses, divided
4 ounces 62% cacao dark chocolate, chopped
2 1/2 cups all-purpose flour
1 1/2 teaspoons soda
1 teaspoon ground ginger
1/2 teaspoon cloves
1/2 teaspoon salt
1 cup hot water


Preheat oven to 350 degrees F.In your Cuisinart Stand Mixer, cream butter and 1/2 cup sugar. Add beaten egg, 1 cup molasses and chocolate. Mix well. Gradually add dry ingredients. Add hot water last and mix well. Pour batter into a greased 9 x 9 inch baking pan. Bake for 30 to 35 minutes or until center springs back when touched. While gingerbread is still hot, spread the top with remaining molasses and sprinkle with 1/4 cup granulated sugar. Allow to cool and cut into squares.
