3 egg whites
1/2 teaspoon cream of tarter
3/4 cup granulated sugar
3/4 cup coarsely chopped toasted pecans
3/4 cup mint chocolate chips
Preheat oven to 200 degrees F. Line baking sheets with parchment paper. In your Cuisinart Stand Mixer bowl, beat egg whites until foamy, add cream of tarter and continue beating until stiff. Gradually beat in sugar. Gently fold in pecans and chocolate chips. Drop scant teaspoonfuls onto parchment sheets (Make them bite-sized!) Bake 1 hour. Turn off oven and let cookie dry in the oven overnight. NO peeking! Store in an airtight container.
