Ingredients

2 1/2 c. flour
1 1/2 c. sugar
1 tsp soda
Juice of 1 lemon
1 tsp soda
1 tsp salt
2 eggs
1 c. softened butter
Zest of 1 lemon

Instructions

Combine flour, soda and salt in small bowl. Beat butter, sugar and lemon juice in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Stir in lemon zest. Gradually beat in flour mixture. Drop by rounded tablespoon on ungreased baking sheets. Bake 11-13 min. at 350 deg. until golden brown. Leave cookies on cookie sheet 2 min. before removing to rack to cool.
