Persimmon Pineapple Cookies

Yummy moist persimmon and pineapple cookies for the holidays and beyond. Recipe may be varied by using different kinds of nuts, such as pecans. Also I like to add a bit more nuts and coconut."

Ingredients

3/4 cup butter
1 cup sugar
1/2 cup ground or mashed persimmon
1/2 cup crushed pineapple
1/4 tsp. baking soda
2 cup flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp vanilla
1 cup chopped walnuts
1 cup shredded coconut
1 egg


Instructions

Cream sugar with butter until fluffy; add egg. Stir baking soda into persimmon and pineapple; add to creamed mixture. Add flour with baking powder and salt to mixture mixing until blended. Add vanilla, nuts, and coconut, mixing well. Bake on greased cookie sheet at 375 degrees for 12 to 15 minutes or until golden brown.
