2 1/4 Cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. Cardamom
1 cup (2 sticks) unsalted butter, softened
3/4 cup caster (bakers') sugar--or of course regular granulated sugar if you don't have it
3/4 cup packed brown sugar
1 tsp. pure vanilla extract
2 large eggs
1 1/2 cups Milk Chocolate Chips
1 1/3 cups dried cherries or cherry flavored cranberries
1 cup chopped pecans
1 cup dark chocolate chips--or semi-sweet if dark chocolate is unavailable
1/2 tbs. butter
1/2 cup chopped pecans
Preheat oven to 375 degrees F. Place sheets of parchment paper on top of cookie sheets.
Combine flour, baking soda, salt, and cardamom in a bowl.
Beat softened butter, caster sugar, and brown sugar until creamy and no lumps can be seen.
Add vanilla and eggs slowly while continuing to beat the mixture.
Gradually beat in flour mixture.
If cherries are too large, chop cherries before adding.
With a wooden spoon, stir in the milk chocolate chips, cherries, and pecans.
Place tablespoon sized dollops 1 1/2 inches apart on parchment covered cookie sheets.
Bake 10-12 minutes or until golden brown.
Remove parchment sheet from baking sheet and allow cookies to cool on the counter for 5 minutes before moving over to wire racks.
Place 1/2 cup chopped pecans in a bowl near the stove for this next step.
Cover another wire rack with parchment or wax paper.
In a double boiler melt 1/2 tbs. butter then add the dark chocolate chips.
Once the chocolate has completely melted and is a thick, even consistency, dip the cookies in the chocolate and then into the pecans.
Place on to the covered wire racks and allow to cool overnight--or if you can't wait for one, place a few in the freezer for a few minutes and then enjoy!
