Mini Apple Fried Pies

Best comfort food ever. Serve with ice cream, coffee or just by themselves with friends"


2 tablespoons butter
6 Granny Smith apples, peeled, cored and sliced
1/4 cup sugar
1/4 cup brown sugar
1/2 teaspoon cinnamon
Pinch nutmeg
1 teaspoon lemon juice
1 cup water
1/4 cup Malibu Coconut Rum
1/4 cup Triplesec
1 teaspoon vanilla
1 tablespoon cornstarch
1 pkg of 2 9" prepared pie crusts
Confectioner sugar for dusting


Preheat the fryer.
Filling: In a sauce pan, melt the butter. Add the apples and sauté for 2 minutes. Stir in 1/4 cup sugar and brown sugar, cinnamon and nutmeg and continue sautéing for about 1 minute, stirring constantly to dissolve sugars. Add the water, coconut rum, triplesec and lemon juice. Bring to a boil. Add the cornstarch dissolved in 1 tablespoon of water with the vanilla into the apple mixture. Reduce the heat to a simmer and cook about 15 minutes, or until the apples are soft. Remove from heat and cool completely.
Take the prepared pie crust and place on a floured board and roll out. Use a biscuit cutter and cut out as many 5" rounds as possible. Place about 1 to 2 tablespoons of filling in the center of each round,fold over and crimp the edges with a fork. Fry the pies 2 to 3 at a time, in the hot oil until golden brown. Remove from oil and drain on a paper-lined plate. Dust with powered sugar while warm.
Serve pies with French Vanilla Ice Cream or a great cup of coffee with friends and family.
