Apple CakeUser Submitted Recipe
1-2 granny smith apples (chopped)
1/2 tsp. nutmeg
1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
2 cups flour
1 cup sugar replacer or granulated sugar
1/2 cup egg beaters (or 2 eggs)
1/2 cup enova oil (or canola oil, or 1 stick melted butter)
1 cup fat-free, light, or regular sour cream
1 tsp. vanilla
Mix all wet ingredients together, then add dry ingredients. Add chopped apples and nuts last. (nuts optional)
Bake in greased and floured bundt pan, in 350 degree oven for approximately 40 minutes.
Remove from oven, let cool, about 10 min., invert pan onto plate. Great served with vanilla ice cream.
