Lowfat Lemon Coffee CakeUser Submitted Recipe
1 (18 1/4 ounce) package lemon cake mix (yellow works as well)
1 (3 1/2 ounce) package fat-free, sugar-free instant lemon pudding mix
1 cup fat-free or lowfat sour cream
1 cup egg beaters
1/2 cup 2% milk
Topping ingredients: Mix and set aside.
1/2 cup chopped walnuts
1/4 cup brown sugar
1/4 sugar replacement (Clabber Girl)
Optional: dried fruits and nuts in place of sugars.
Preheat oven to 350 degrees. Grease 4 mini loaf pans.
Combine cake ingredients and mix well. Take half of the batter and evenly distribute into the greased loaf pans. Sprinkle the topping over the batter in the pans, spoon remaining batter over topping. Bake for approximately 30-35 minutes or until cakes test done with toothpick test.
