Ingredients

Simply Apple Pie

Simple and delicious apple pie

1 lb 6oz All purpose Flour
2 Tbsp Sugar
1 Tbsp Brown sugar
1 tsp Salt
13 oz Cold Shortening cut into small pieces
5-6 oz Cold water

Filling
8-10 Granny Smith Apples (cored and cut in 1/3 in slices)
2-3 Tbsp Flour
2 T Sugar
1 Tbsp brown sugar
1 Tbsp cinnamon


Instructions

Using the Cuisinart Stand mixer bowl, combine all the dry ingredients to make the pie dough. Add the Shortening and stir with your hand. Make sure that all the pieces are cover with flour. Using your paddle attachment at low speed, combine all the ingredients. Turn your mixer on and off every 30 seconds. After you see that your flour mixture is at a cornmeal texture, start adding the cold water. Use a tablespoon for this process and continue turning on and off your mixer. You may not need to use all the water. As soon as you see that you’re forming big chunks of dough, stop your mixer. Make it into a ball and refrigerate. While the dough is refrigerated, combine all the apples and all the ingredients together and mix with your hands until all the apples are covered.
Roll dough until ¼ inch thick and about 2 inches larger than your pie dish. Spray your dish, so the dough doesn’t stick, and place your rolled dough. Carefully cover the bottom of the pie dish. You can fold or trim the extra dough at the edge.
Place the apples on the pie dish.
Place the dish in the refrigerator. Roll more dough enough to cover the top of the pie and trim the edges. After the pie is covered, make 3-4 holes on top of the pie. Using your fork press the border of the pie. This helps the layer of dough to stick and it also makes a beautiful decoration. Brush the top with a combination of 1 Yolk and 1/4C of milk. To finish- sprinkle sugar on top.
Bake in a 365*F oven for about 30 -45 min. Until you apples are tender. You can stick a knife to test the pie.
