Mexican wedding cake

Simply delicious easy cake to make when in a hurry."


2 cups flour
2 cups sugar
2 cups pecans
2 tsp. baking soda
1 20 oz. can crushed pineapple
8 oz. cream cheese
2 cups powdered sugar
1 stick butter
1 tsp vanilla


Preheat oven to 350 degrees. Mix ingredients together and pour into greased 9 X 13 Baking pan. Bake for 35 minutes. Let cool, then frost.
Frosting: Let cheese and butter come to room temp. Add sugar and vanilla. Stir until well blended. Spread on cooled cake. After frosting put in fridge.
