Deluxe Oatmeal Cookies

This is a standard oatmeal cookie recipe jazzed up with some of my favorite extras. The toffee bits make the cookies extra chewy, the way my family loves them! "


1 Cup (2 sticks) butter, softened
1 cup light brown sugar, packed
1/2 cup granulated sugar
1 teaspoon double-strength vanilla
1 8 oz package toffee bits
1 ½ cups all purpose unbleached flour
1 teaspoon baking soda
1 teaspoon Chinese five spice powder
1/2 teaspoon salt
3 cups old fashioned oats
1 8-oz box chopped dates
1 cup coarsely chopped macadamia nuts
1 cup coarsely chopped pecans


Preheat oven to 350 degrees.
Beat softened butter and sugars together until light and fluffy.
Add eggs and vanilla. Beat well.
Add toffee bits. Mix until well distributed throughout batter.
Combine flour, soda, Chinese five spice powder and salt.
Slowly add flour mixture to butter mixture. Mix well.
Combine oats, dates, and nuts. Stir in to batter until well mixed.
Drop by rounded tablespoons onto ungreased cookie sheet.
Bake 10-12 minutes or until lightly browned.
Cool 1 minute on cookie sheet then transfer to wire rack.
