Easy Peanut Butter Cookies

These peanut butter cookies are not only too easy, but they are low-carb as well! These are a great dessert for any dieter, diabetic, as well as those not watching their waist lines! Each cookie contains 66 calories, 4g fat, and only 7g Carbs! "
Ingredients
1 Cup Sugar
1 Cup Peanut Butter
1 egg
extra sugar
Instructions
Preheat oven to 375 degrees. Grease cookie sheets and set aside. In a medium bowl, stir together all ingredients until well mixed. Form dough into one inch balls.
Roll the one inch balls in sugar and place balls two inches apart on the cookie sheet. Using a fork, press cookies flat by making a criss-cross pattern with the fork.
Bake about 9 minutes or until edges are set and bottoms slightly browned.
Cool on rack, store in covered container. ENJOY!
