Lemon Chess Pie

This is divine. The texture of the filling is smooth and the flavor is intensely lemon-packed."


1 9" pie shell, unbaked
1 1/2 c sugar
2 Tbsp white cornmeal
1 Tbsp all-purpose flour
4 eggs, room temperature
4 Tbsp melted butter, slightly cooled
1/4 cup milk
1 lemon's rind
1 lemon's juice
confectioner's sugar


Place crust in a lightly greased pie pan, create a pretty fluted edge
Whisk the other ingredients together in a bowl and pour into the pie shell
Bake at 325 for 45 minutes
When cooled to room temperature sprinkle on the confectioner's sugar as a garnish
This can be served at room temperature or chilled
