Apple Dessert - Ugly/delicious

APPLE DESSERT – LOW CALORIE, UGLY, DELICIOUS

Serves 1 generously or 2 adequately. It looks terrible but tastes wonderful. The tortilla is crisp and buttery light brown, the apples soft and the cheese all runny and brown crisp, slightly sweet from the sugar or sweetener. Serve hot.
Approximate calories.
1/2 apple about 50 calories
1 flour tortilla about 50 calories
butter about 125 but it’s so good, who’s counting.

Ingredients

1/2 apple, unpeeled. Cut into 1/4 “ wedges. I like Fuji best.
1 small (6”) flour tortilla
1 slice Swiss cheese
1 teaspoon butter
1 T butter
1 envelope Sweet N Low (or less) OR (Brown Sugar would be good)
Scant sprinkle of Cinnamon
Scant sprinkle of Nutmeg
6 or 8 raisins
Optional – a few bits of pecan pieces


Instructions

Put the tsp of butter into a heavy small skillet that has a lid and melt it on low
Cut the tortilla in half and lay both halves in the skillet.
Arrange the apple slices on one half of the tortilla
Arrange the cheese on the other half of the tortilla
Put the tablespoon of butter on the apple slices, smeared across
Sprinkle the buttered apple with Sweet N Low, (or brown sugar, Cinnamon and Nutmeg
Scatter 6 or 8 raisins over top of apples & butter
Add the optional pecan pieces if desired.
Cover. Cook low heat for a few minutes until cheese begins melting and is sticking to the tortilla half. Lift the cheesy half and lay it over the apples. Cover and continue cooking about five minutes on low. Turn the tortilla over and cover again. Cook a few more minutes – apples will be done. Cheese will be running out and turning dark.
