Cheesecake Flan

Deliciousely creamy cheesecake dessert."


4 eggs
8 oz. cream cheese
4oz. soft cheese (fresco)
1 can evaporated milk
1 can sweetened condensed milk
1 tsp vanilla extract


Place half an inch of water in baking pan large enough to hold pie pan, put into oven.
Note: you may use a large pan for both pies.
Preheat oven to 375 degrees F.
Blend all ingredients in blender.
Pour half of the mixture into a pre-made pie crust with pie pan (yields 2 pies).
Place each pie into its water filled pan. Carefull, water will be hot.
Bake for 1 hr 15 min or until light golden brown on top and an inserted toothpick comes out clean. It's ok if the tooth pick comes out a little moist.
