Chocolate Coffee Cake

Wonderful chocolate & coffee iced cake. Has a texture like pound cake - but so much better! "


2 ½ cups sugar
1 cup margarine
5 eggs, separated
1 cup buttermilk
3 cups flour
1 tsp. baking soda
1 tsp. salt
6 tsp. cocoa
5 tbsp. brewed espresso coffee (or very strong coffee)
2 tsp. vanilla
½ cup margarine
1 egg
4 tbsp. cocoa
1 tsp. vanilla
1 box confectioner’s sugar
3 tbsp. brewed espresso coffee


Cake: Cream sugar and margarine. Add egg yolks and beat well.
Mix buttermilk and coffee together. Add dry ingredients and buttermilk mixture alternately. Mix well.
Add vanilla. Beat well.
In separate bowl beat egg whites until stiff. Fold into cake batter.
Bake in greased and floured 10” tube pan. Bake at 350 F for 1 hr – 1 hr. 15 min. or until tester comes out clean.
Frosting: Cream margarine. Add egg. Beat well.
Sift cocoa with sugar. Add to creamed mixture.
Add vanilla and enough coffee to make spreading consistency.
