Banana Bread with Walnuts

INGREDIENTS
Non Stick spray (butter flavored)
2 large eggs
½ teaspoon vanilla extract (pure, not imitation)
½ cup of unsalted butter (one stick)
1 cup sugar
1 ¼ cups all purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 sliced bananas (the riper the better)
1 teaspoon cinnamon
½ cup chopped walnuts (optional)
Instructions
Preheat your oven to 350° F.
Lightly coat a loaf pan with non stick butter flavored spray. This will prevent your banana bread from sticking.
Beat the eggs and vanilla extract in a container with a spout and set aside.
In your Cuisinart Stand Mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy. Slowly pour in the egg and vanilla mixture into the creamed butter while your mixer is on low. Do this until the two are well incorporated. While still on low, add the sliced bananas into the mixture. Your mix will look curdled at this point.
Sift flour, baking soda and salt in a medium bowl. Gradually add the flour to the mix. (If you dump it in all at once, there will be a huge flour mess, so be sure to take your time) Take the bowl off the mixer and fold in the cinnamon and chopped walnuts.
Pour your mix into the greased loaf pan. Place in the preheated oven and cook for approximately 50 minutes.
You will know when the bread is done, when you insert a knife into the center of the bread and it comes out clean.
