Rice & Cherries In The Snow

A rice pudding with cherries"


3 cups of water
Dash of salt
1 1/2 cups regular white rice
1/2 cup sugar
1 envelope plain gelatin
1 cup heavy cream whipped
3 1/3 cups milk
1 tablespoon butter
1 teaspoon almond extract
2 cans cherry pie filling


In a large sauce pan bring water and salt to a boil. Add rice, cover and cook over medium heat for 15 minutes. Stir in 3 cups of milk, the sugar and butter. Cook over low heat, stirring occasionally until thickened.

Meanwhile soften gelatin in remaining 1/3 cup milk and stir into rice mixture. Cool 2 to 3 minutes longer. Remove from heat and stir in almond extract. Let cool. Fold whipped cream into rice mixture and turn into serving bowl. Chill until firm.

Spread cherries on top and chill 2 to 3 hours before serving.
