Italian Canestrellu

Ligurian traditional recipe


(for 5 cakes)
- 1 liter of milk,
- a pound of butter,
- 10 eggs,
- 1 kg of sugar,
- two cubes of yeast,
- salt, raisins.


Warm the milk and dissolve the yeast.
Add eggs, sugar, vanilla, grated rind of untreated lemon and a pinch of salt. The dough should be dense but not hard.
Warm a little of white wine or Marsala and soften the raisins, cover with flour and add to the mix.
Grease and cover with flour a baking cake, pour the mixture well leveled.
Bake in preheated oven at 175° C for 35-40 minutes, depending on the size of the mold.
