Cheese Souffle

This is an old recipe adapted from Mrs. S. R. Dull's "Southern Cooking". My Mother taught herself to cook from this wonderful collection of recipes, and this cheese souffle was one of our favorite foods. As children we thought this cheesy, puffy dish was hard to make and very special, but as you can see, it is amazingly simple. We begged my Mother to make it often because it is so good. My Mother is now nearly 88 and she can still make us feel special by making this heavenly cheese souffle."
Ingredients
1 cup bread crumbs
1 cup grated sharp cheese
1 and 1/2 cups of milk
2 eggs
salt and pepper to taste
Instructions
Heat milk just tepid, pour over bread crumbs and mix well. Add well beaten eggs and all other ingredients. Pour into a buttered baking dish and bake in moderate oven until firm (20 to 30 minutes).
