a farm fresh dish, with eggs from free range and local farmers with a small chicken flock of different types of chickens and taste is great and earthy, and very light because of the club soda."
Ingredients
6-8 farm fresh green or brown eggs
1/4 cup club soda
1/4 cup thinly sliced pepper
1/4 cup thinly sliced sweet onion
1 tabl. butter salt free
8 inch frying pan
Instructions
Crack eggs into a small to medium bowl add club soda and whip with a wire whisk till blended. Set aside.
Heat fry pan (none stick kind) melt the butter and add peppers and onions, saute till almost tender and still hold color, add the eggs and cook, shaking to help move egg mixture around lift with none stick spoon and allow the eggs mixture to run under. When set, flip and brown other side, slide onto serving plate, dust with salt and pepper to taste, cut into wedges and serve with toast and coffee, enjoy.
