Ingredients
6-7 eggs (depending on size of pan)
1 cup half and half
1 small can diced Ortega chilies (mild) – I use about 2/3 can
½ pound cooked and cooled bacon, crumbled
about 8 ozs. shredded Monterey Jack cheese
1 uncooked pie crust
Instructions
Line a glass pie pan or quiche pan with uncooked pie crust. Add cooked bacon pieces, chilies and cheese. Blend eggs with half and half. Pour over the cheese. Bake at 350 for about 30 minutes. Check for brownies and cover with foil if necessary. Cook another 15 minutes or until a knife inserted in the middle comes out clean. Let it set on wire rack for about 20 minutes before serving.
