Blueberry Muffins with Creme Fraiche Frosting

Ingredients

2 cups oats
1 cup flour
1 tbsp baking powder
3 eggs
1/2 cup blueberries
1 cup creme fraiche
1/2 cup goat cheese
1/2 cup sucanat
2 tbsp honey
1/2 cup butter
1/2 cup whipping cream


Instructions

Preheat oven for 375.

In a food processor, cream the butter and sucanat until fluffy add the blueberries and pulse for 2 seconds, in a separate bowl add flour, oats and baking powder. fold the butter/blueberry mixture into the flour while slowly adding cream until it is a creamy consistency. Cook for 15 minutes or until done.

Clean the food processor and add creme fraiche, goat cheese and honey, whip on high until light and fluffy. Add a drop on top of muffins.
